### **Ingredients**
#### ✅ **For the tofu and vegetable curry**
- 200 g of firm natural tofu
- 1 tablespoon of olive oil
- 1 medium onion, chopped
- 1 clove of chopped garlic
- 1 carrot cut into slices
- 1 zucchini, diced
- 1 yellow pepper cut into strips
- 200 ml of coconut milk (unsweetened)
- 1 teaspoon of mild curry powder
- 1 pinch of turmeric
- 1 pinch of salt
- 1 tablespoon of lemon juice
- A few fresh coriander leaves (optional)
#### ✅ **For the accompaniment**
- 120 g of basmati rice
- 250 ml of water
- 1 tablespoon of olive oil
- 1 pinch of salt

### **Preparation**
#### 🍛 **1. Prepare the tofu and vegetable curry**
1. Drain and cut the tofu into cubes.
2. In a skillet or saucepan, heat olive oil over medium heat. Add chopped onion and minced garlic. Sauté **3 minutes**.
3. Add the tofu pieces and brown them **5 minutes**.
4. Add carrots, zucchini and pepper. Mix and cook for an additional **5 minutes**.
5. Pour in the coconut milk, curry, turmeric and salt. Mix and simmer over low heat **10 minutes**, until the vegetables are tender.
6. At the end of cooking, add the lemon juice and mix one last time.
#### 🍚 **2. Prepare the basmati rice**
1. Rinse the rice under cold water.
2. In a saucepan, heat the olive oil and add the rice. Brown for **2 minutes**.
3. Add water and salt, cover and cook over low heat for **12 minutes**, until all the water is absorbed.
#### 🍽️ **3. Dressage and service**
1. Place the basmati rice on the plates.
2. Add the tofu and vegetable curry on the side.
3. Sprinkle with fresh coriander and serve immediately.
