- 2 medium potatoes

- 1 zucchini

- 1 egg

- 50 g of wheat flour

- 1 tablespoon of olive oil

- 1 pinch of salt

- Black pepper (optional)

- 1 tablespoon chopped fresh parsley (optional)

### **Preparation**


#### 🥔 **1. Prepare the vegetables**

1. Wash and peel the potatoes. Grate them finely.

2. Wash the zucchini and grate it as well.

3. In a salad bowl, mix the grated potatoes and the grated zucchini.

4. Drain the mixture to remove excess water by squeezing with your hands or using a clean tea towel.


#### 🍳 **2. Prepare the pancake dough**

1. Add the egg, flour, salt, pepper and parsley (if you want to add it). Mix until you get a smooth dough.
