### **Ingredients**


#### ✅ **For the pan-fried turkey with mushrooms**

- 2 turkey escalopes (150 g each)

- 1 tablespoon of olive oil

- 100 g of fresh button mushrooms

- 1 medium onion, chopped

- 1 clove of chopped garlic

- 100 ml of light crème fraîche

- 1 tablespoon of lemon juice

- 1 pinch of salt

- White pepper (optional)

- 1 teaspoon of dried oregano


#### ✅ **For saffron rice**

- 120 g of basmati rice

- 1 dose of powdered saffron or 2 saffron pistils

- 250 ml of water

- 1 tablespoon of olive oil

- 1 pinch of salt

### **Preparation**


#### 🍗 **1. Prepare the turkey and mushroom stir-fry**

1. Cut the turkey cutlets into pieces.

2. Heat olive oil in a skillet over medium heat.

3. Add chopped onion and garlic, then sauté **3 minutes** until translucent.

4. Add the sliced mushrooms and cook **5 minutes** until they release their water.

5. Add the turkey pieces, salt and pepper, then brown **5 minutes** while stirring.

6. Pour in the crème fraîche and lemon juice, add the oregano and simmer for **5 minutes** over low heat.


#### 🍚 **2. Prepare the saffron rice**

1. Rinse the rice under cold water.

2. Heat the olive oil in a saucepan and add the rice. Sauté **2 minutes** over medium heat.

3. Add the water and saffron, then a pinch of salt.

4. Mix, cover and cook over low heat for **12 minutes**, until all the water is absorbed.


#### 🍽️ **3. Dressage and service**

1. Place the saffron rice on the plates.

2. Add the turkey and mushroom pan on top.

3. Serve immediately with a crisp salad or steamed vegetables.
