### **Ingredients**

- 150 g of arborio rice (risotto rice)

- 1 tablespoon of olive oil

- 1 finely chopped shallot

- 1 clove of chopped garlic

- 100 g of sliced fresh Paris mushrooms

- 500 ml of vegetable broth (no added salt)

- 50 ml of light crème fraîche

- 30 g grated parmesan

- 1 tablespoon of lemon juice

- 1 pinch of salt

- White pepper (optional)

- A few fresh parsley leaves (optional)

### **Preparation**


#### 🍚 **1. Prepare the risotto**

1. Heat olive oil in a saucepan over medium heat.

2. Add the chopped shallot and garlic, then sauté **3 minutes** until translucent.

3. Add the arborio rice and stir for **2 minutes**, until it becomes slightly pearly.

4. Add the sliced mushrooms and mix well.


#### 🔥 **2. Cooking the risotto**

1. Pour in a ladle of hot vegetable stock and mix gently.

2. When the liquid is absorbed, add another ladle of broth and continue like this for **18 to 20 minutes**, stirring regularly.

3. When the rice is tender and creamy, stir in the crème fraîche and grated parmesan.

4. Add the lemon juice, a pinch of salt and white pepper, then mix one last time.
