Ingredients

For the flan

  • 500 ml of milk

  • 2 eggs

  • 50 g caster sugar

  • 1 tablespoon of cornstarch

  • The zest of an untreated orange

  • 1 teaspoon vanilla extract


Preparation


🍊 1. Prepare the flan mixture

  1. In a saucepan, heat the milk with the orange zest and vanilla over low heat for 5 minutes .

  2. In a bowl, beat the eggs with the sugar until frothy.

  3. Add the cornstarch and mix well.


🔥 2. Cooking the flan

  1. Remove the milk from the heat and strain to remove the zest.

  2. Gradually pour the hot milk into the egg mixture while stirring.

  3. Pour the mixture back into the saucepan and cook over low heat, stirring, for 5 minutes , until the mixture thickens slightly.


🍽️ 3. Baking

  1. Pour the mixture into individual ramekins.

  2. Bake at 160°C in a bain-marie for 30 minutes , until the flans are set.

  3. Allow to cool to room temperature, then place in the refrigerator for 2 hours before serving.


Compatible accompaniments

🍯 A drizzle of honey : For an extra sweet touch.

🍊 A few orange segments : For an even fruitier effect.


Tips and alternatives

Refined sugar-free version : Replace sugar with honey or agave syrup.

Adding flavors : A pinch of cinnamon or nutmeg will enhance the aroma of the orange.
