Lemon Chicken with Quinoa is a low-copper recipe that’s perfect for people with Wilson’s disease . Quinoa is a great alternative to copper-rich grains like whole wheat, and the lemon adds a tangy kick without adding heavy metals.


🛒 Ingredients

✔️ 2 chicken fillets

✔️ 1 organic lemon (juice + zest)

✔️ 120 g of quinoa

✔️ 1 zucchini

✔️ 1 clove of garlic

✔️ 1 tbsp olive oil

✔️ 1/2 tsp turmeric

✔️ 1/2 tsp black pepper

✔️ Fresh parsley for decoration

✔️ Salt (in small quantities, according to medical recommendations)


👨🍳 Instructions

1️⃣ Prepare the ingredients

🔹 Rinse the quinoa under cold water to remove the bitterness.

🔹 Wash and cut the zucchini into small cubes.

🔹 Squeeze the lemon to extract the juice and collect the zest.

🔹 Finely chop the garlic.


2️⃣ Cooking quinoa

🔹 In a saucepan, bring 250 ml of water to the boil.

🔹 Add the quinoa, cover and cook over low heat for 10 to 12 minutes , until the water is completely absorbed. Set aside.


3️⃣ Cooking chicken and vegetables

🔹 In a frying pan, heat 1 tbsp of olive oil .

🔹 Add the chicken and cook for 5 minutes on each side , until golden brown.

🔹 Add the chopped garlic, diced zucchini, turmeric and pepper. Mix.

🔹 Pour in the lemon juice and zest, simmer for another 5 minutes over low heat.


4️⃣ Assembly and service

🔹 Serve the quinoa on a plate.

🔹 Place the chicken fillets on top.

🔹 Add the lemony zucchini and sprinkle with fresh parsley .
