### **Ingredients**
#### ✅ **For the homemade shortcrust pastry (optional)**
- 125 g of wheat flour
- 60 g of unsalted butter
- 1 pinch of salt
- 40 ml of water
#### ✅ **For the garnish**
- 2 medium leeks
- 2 eggs
- 100 g of fresh goat cheese
- 100 ml of light crème fraîche
- 1 tablespoon of olive oil
- 1 pinch of nutmeg
- 1 pinch of salt
- White pepper (optional)

### **Preparation**
#### 🥧 **1. Prepare the shortcrust pastry (if homemade)**
1. Mix flour and salt in a bowl.
2. Add the butter cut into small pieces and rub in with your fingertips.
3. Gradually add the water and knead until you obtain a smooth ball.
4. Roll out the dough and place it in a pie dish. Prick the bottom with a fork.
#### 🥬 **2. Prepare the filling**
1. Wash and cut the leeks into thin slices.
2. Heat the olive oil in a frying pan and brown the leeks **10 minutes** over low heat, until soft.
3. In a bowl, beat the eggs with the crème fraîche, salt, nutmeg and pepper.
4. Add the crumbled fresh goat cheese and mix gently.
#### 🔥 **3. Cooking the quiche**
1. Preheat the oven to **180°C**.
2. Spread the cooked leeks over the base of the tart.
3. Pour the egg and cream mixture on top.
4. Bake for **30 minutes**, until the quiche is golden brown.
#### 🍽️ **4. Dressage and service**
1. Let stand **5 minutes** before unmolding.
2. Serve with a light green salad.
