### **Ingredients**

- 2 hake fillets (150 g each)

- 1 tablespoon of olive oil

- 1 tablespoon of lemon juice

- 1 teaspoon of lemon zest

- 100 ml of light crème fraîche

- 1 clove of chopped garlic

- 1 pinch of salt

- White pepper (optional)

- A few sprigs of fresh chives (optional)


#### ✅ **For the carrot puree**

- 3 medium carrots

- 1 small potato (for texture)

- 1 tablespoon of olive oil

- 1 tablespoon of light crème fraîche

- 1 pinch of nutmeg

- 1 pinch of salt

### **Preparation**


#### 🐟 **1. Prepare the hake in lemon sauce**

1. In a skillet, heat the olive oil over medium heat.

2. Add the hake fillets and cook **4 minutes on each side**, until lightly browned.

3. In a bowl, mix the crème fraîche, lemon juice and zest, chopped garlic, salt and pepper.

4. Pour the sauce over the hake fillets and simmer for **2 minutes** over low heat.


#### 🥕 **2. Prepare the carrot puree**

1. Peel and cut the carrots and potato into pieces.

2. Steam or cook in a pan of boiling water for **15 minutes**, until very tender.

3. Drain, then mash with a fork or a hand blender. Add the olive oil, crème fraîche, nutmeg and a pinch of salt. Blend well until smooth.


#### 🍽️ **3. Dressage and service**

1. Place the carrot puree on the plates.

2. Gently add the hake fillets covered in lemon sauce.

3. Sprinkle with fresh chives and serve immediately.
