✅ 2 medium carrots
✅ 1 sweet potato (about 200 g)
✅ 1 onion
✅ 500 ml of copper-free vegetable broth
✅ 100 ml of light crème fraîche
✅ 1 tablespoon of olive oil

🔪 Preparation
1️⃣ Preparation of vegetables
Peel and cut the carrots and sweet potato into pieces.
Finely slice the onion .
2️⃣ Cooking
In a saucepan, heat the olive oil and brown the onion for 2 minutes .
Add the carrot and sweet potato pieces, and brown for another 3 minutes .
Pour in the vegetable stock and bring to a boil.
Reduce heat and simmer for 20 minutes , until vegetables are tender.
3️⃣ Mixing and serving
Mix everything together using a blender or hand blender until you obtain a smooth, velvety texture.
Add the crème fraîche , mix well, then season with salt, pepper and spices to taste .
