### **Ingredients**
#### ✅ **For the coral lentil pancakes**
- 100 g of coral lentils
- 1 small grated carrot
- 1 small chopped onion
- 1 clove of chopped garlic
- 1 tablespoon of rice flour (or corn flour)
- 1 tablespoon of chopped fresh parsley
- 1 teaspoon of cumin powder
- 1 pinch of salt
- 1 tablespoon of olive oil
#### ✅ **For roasted vegetables**
- 1 zucchini
- 1 red pepper
- 1 carrot
- 1 tablespoon of olive oil
- 1 pinch of dried thyme
- 1 pinch of salt

### **Preparation**
#### 🥙 **1. Prepare the coral lentil pancakes**
1. Rinse the coral lentils under cold water.
2. Cook them in a pan of boiling water for **15 minutes**, then drain them.
3. In a salad bowl, mash the cooked lentils with a fork or potato masher.
4. Add the grated carrot, chopped onion, chopped garlic, flour, parsley, cumin and salt.
5. Mix well until you obtain a smooth paste.
6. Form small patties and let them rest **5 minutes** in the refrigerator.
7. Heat the olive oil in a frying pan and cook the patties **3 minutes on each side**, until golden brown.
#### 🥕 **2. Prepare the roasted vegetables**
1. Preheat the oven to **200°C**.
2. Wash and cut the zucchini, pepper and carrot into pieces.
3. Place them on a baking sheet covered with baking paper.
4. Drizzle with olive oil, sprinkle with thyme and salt, then mix well.
5. Bake for **20 minutes**, stirring halfway through cooking.
#### 🍽️ **3. Dressage and service**
1. Place the roasted vegetables on a plate.
2. Add the golden lentil patties on the side.
3. Serve immediately with a squeeze of lemon or a light yogurt sauce.
