### **Ingredients**


#### ✅ **For the chicken tagine**

- 2 chicken thighs (or 2 fillets)

- 1 tablespoon of olive oil

- 1 medium onion, chopped

- 1 clove of chopped garlic

- 1/2 preserved lemon cut into small pieces

- 50 g pitted green olives

- 1 teaspoon of turmeric

- 1 teaspoon of powdered ginger

- 1/2 teaspoon of cumin

- 250 ml of hot water

- 1 pinch of salt

- White pepper (optional)

- A few sprigs of fresh coriander (optional)


#### ✅ **For the accompaniment**

- 120 g of fine semolina (couscous)

- 1 tablespoon of olive oil

- 200 ml of hot water

- 1 pinch of salt

### **Preparation**


#### 🍗 **1. Prepare the chicken tagine**

1. Heat olive oil in a large skillet or tagine over medium heat.

2. Add the chopped onion and minced garlic, then sauté **3 minutes** until translucent.

3. Add the chicken pieces and brown them **5 minutes** on each side.

4. Stir in turmeric, ginger, cumin and salt. Mix well to coat the meat with spices.

5. Pour in the hot water, add the olives and the pieces of preserved lemon.

6. Cover and simmer over low heat for **25 minutes**, stirring occasionally.


#### 🍚 **2. Prepare the semolina**

1. Pour the semolina into a large bowl with a pinch of salt.

2. Add olive oil and mix well.

3. Heat the water, then pour it over the semolina. Cover and let it swell for **5 minutes**.

4. Fluff with a fork to obtain a light texture.


#### 🍽️ **3. Dressage and service**

1. Place the semolina on the plates.

2. Add the chicken pieces and cover with the spiced and lemon sauce.

3. Garnish with fresh coriander (optional) and serve hot.
